Crayfish a.k.a. "Crawfish" are freshwater crustaceans belonging to the Astacidea family, which also include lobster in the scientific identification of these bugs... Crayfish, much like other crustaceans breath through feather-like gills. Some species are found in brooks and streams, where fresh water is running, while others thrive in swamps, ditches, and paddy fields.
Surprisingly, Crayfish feed on animals and plants, either living or decomposing, and detritus. Crayfish are also known locally as"crawdads," "mudbugs", and "yabbies." In the Eastern United States, "crayfish" is more common in the north, while "crawdad" is heard more in the south- central and southwestern regions, and "crawfish" farther southwest in states like Lousiana, and Texas. Louisiana designated the name "crawfish," and is most commonly called "crawfish," as its official state crustacean. Despite their feeding habits Crawfish are enjoyed throughout the country and considered one of the most sought after crestaceans around their harvest months. Its all about the "7 P's" when preparing this delicacy before eating! With the right spice mix accompanied with other veggies and Cajun sausage will make a delightful culinary experience eating Crawfish! |
